Sprouts Salad

Sprouts salad is a very nutritious one that can be had as breakfast or healthy snack or starter or even as spicy chat. 

Ingredients:

1. Tomato - 1/2 cup finely chopped
2. Orange - 1/2 cup chopped (Can be replaced by pomegranate beads)
3. Onion - 1/3 cup finely chopped
4. Green gram sprouts - 1 cup 
5. Lemon juice - 1 tbsp
6. Salt to taste
7. Pepper to taste (Can add finely chopped green chilies if you want)
8. Italian seasoning - 1/4 tsp (Optional)
9. Ginger juice - 1 tsp
10. Olive oil - 2 tbsp
11. Coriander or mint leaves - 1 tsp finely chopped

Method:


Step 1: Steam or blanch the sprouts with little salt and let it cool.


Step 2: Take all the listed ingredients from 5-10 in a small cup and mix well.


Step 3: In a large bowl, add the tomato, orange/ pomegranate, onion, sprouts and pour the dressing on top of it.






Step 3: Add coriander/ mint leaves, toss well and serve immediately.


TIPS:
* You can add roasted and salted peanuts to the salad to add nutrition and crunch
* You can serve it as a salad or can also serve it as a topping on roasted papad which is your masala papad or can also layer it between breads to get your tasty nutritious sandwich.

Hot Salad

On a rainy day with cool weather, how do we have salad?! Yeah, just heat and have the salad ;) That is what we did... Hot Salad!!! Good invention nah?!

Ingredients:

1. Cabbage - 1 cup shredded
2. Capsicum - 1 small
3. Carrot - 1 medium
4. Salt to taste
5. Pepper - 1 pinch
6. Olive oil - 1 tbsp
7. Garlic - 4 cloves
8. Vinegar - 1 tsp

Method:

Step 1: Chop the vegetables into long thin shapes.
Step 2: Heat a wide pan, pour into it oil and thrown in sliced garlic.
Step 3: In high heat, add all the chopped vegetables and stir for 2 minutes.
Step 4: Then with the high heat, sprinkle salt, pepper and vinegar.
Step 5: Toss and switch off heat.
Step 6: Serve hot salad immediately.


TIPS:
* Because I did not have lemon and coriander/mint leaves at home I used vinegar and garlic for taste and flavor respectively. You can use the actual salad ingredients to prepare the hot salad as well. (Mine seem more like a stir fry and salad fusion)

Barley & Red Rice Salad

This is a modified version of the salad that Viky Ratnani demonstrated in one of his shows. First time, i felt I had a healthy salad that tasted as good as a chaat. 

Ingredients:


1. Steamed red rice - 3/4 cup
2. Steamed barley - 1/2 cup
3. Cooked rajma - 1/2 cup
4. Pomegranate beads - a handful
5. Coriander - 3 tbsp finely chopped
6. Onion - 1 chopped
7. Orange - 1/2
8. Lemon - 1/2
9. Pepper powder - 1/2 tsp
10. Olive oil - 1 tbsp

Method:

Step 1: Drain the water from cooked rice, barley and rajma. Spread them in a wide bowl to let the moisture evaporate.
Step 2: Add pomegranate beads, coriander, chopped onion and toss well with olive oil.
Step 3: Add this to cooked grains; then squeeze in orange juice, lemon juice, sprinkle pepper, salt and mix well.
Step 4: Serve chilled or as is.
